Winning Salad
(Paleo, Vegan, Vegetarian, op. Raw, GF, DF, RSF)
Serves 4-5
Ingredients:
1 head of broccoli,
3 stalks of kale (I used curly kale) chopped into edible sized pieces, can substitute spinach if preferred
2 green apples, cubed, not peeled
2 carrots, grated
1 small punnet, 8-10 small strawberries, thinly sliced
1/2 an avocado sliced
1 handful each of:
-Walnuts
-Pepitas
-Almonds
Dressing
2 tsp. raw organic honey
2 Tbsp. balsamic vinegar
Method:
Par steam broccoli florets, 3 minutes in a 1000W microwave with 1-2cm of water, or lightly cook over stove, so it is still slightly crunchy, or serve Raw if you desire. If par cooked, run under cold water until cold/place in the fridge to cool.
Combine all ingredients in a bowl, and dress, serve
Serving tip: We love this with marinated and BBQ meats. It also makes a lovely light meal on its own. We always make extra or fill out leftovers, by adding avocado and baby tomatoes, for next day lunches. This is a favourite round our place, hence the name, with second helpings often consumed.
