Serves 8-10
Ingredients:
2 cups coconut chips
2 cups unsweetened shredded coconut
1/2 cup pepitas/pumpkin seeds
1/3 cup sunflower seeds
1/4 cup chia seeds
1/4 cup poppy seeds
1/4 cup sesame seeds
1/4 cup linseeds/flaxseeds
100g pecan nuts, chopped
1 cup macadamia halves
1/2 cup hazelnuts
2-4 Tbsp. EV coconut oil
2-4 Tbsp. raw honey/rice malt syrup/pure maple syrup
2-4 Tbsp. Cacao powder
2-4 tsp. GF vanilla extract
4 tsp. cinnamon
Method:
Preheat oven to 125 degrees celsius. Place all ingredients in a bowl and mix with hand stop combine. Line a huge/two smaller baking trays with baking paper and distribute muesli mix over evenly. Bake for 15 minutes, turn, bake a further 15 minutes. Remove from oven and store in an airtight container.
