Paleo Bolognese Sauce
(Paleo, GF, DF, RSF)
Serves 6-8
Ingredients:
1 kg grass-fed beef mince
1-2 brown onions, diced
6 cloves garlic, crushed
2 tins diced tomatoes
1/2 container (70g) of tomato paste
1 bottle of passata (italian bottled tomato sauce)
a decent lug of olive oil
1 Tbsp. dried oregano
1 Tbsp. dried basil
a handful of celery leaves
Optional: 1-2 grated carrots
Method:
Over low heat, place diced onions in a saucepan and cook until translucent. Add beef mince and cook, stirring until browned. Add in crushed garlic, tomatoes, sauce, paste, olive oil and dried herbs, stir to combine. Turn heat up or down as required to simmer the sauce. When simmering put in celery leaves and use a spoon to push below surface. Simmer for 1-2 hours, remove celery leaves before serving/use.
Serve with spiralled vegetable noodles, carrot/zucchini or sweet potato
