Lorna Jane's Roasted Pear, Kumara and Brussel Sprout Salad From Nourish
(Paleo*, Vegan*, GF, DF, RSF)
Serves 2
Ingredients:
1 large pear
½ medium kumara (orange sweet potato)
250gm brussel sprouts
2 tsp. EV coconut oil
1 tsp. finely chopped fresh rosemary leaves
3 cups baby rocket (arugula)
¼ cup roasted, chopped almond kernels
50gm soft goat’s cheese, crumbled*
Macadamia and mustard dressing
2 Tbsp. macadamia oil
2 Tbsp. apple cider vinegar
1 tsp. wholegrain mustard
1 tsp. raw honey**
*Use cashew ricotta or remove cheese altogether for Paleo/Vegan
** Leave out or substitute maple syrup for Vegan
Method:
Preheat oven to 200°C. Cut cored, unpeeled pear into 8 wedges. Combine pear, brussel sprouts and kumara with oil and rosemary. Place on a baking tray in a single layer, season and roast for approximately 25mins or until golden and fork tender. Make dressing in a jar or bottle and shake well. Combine roasted vegies and pear in a bowl with rocket and dressing, serve with nuts and cheese, if desired.
