lemony goodness bliss balls
Makes about 20 balls
Ingredients:
2 cups cashews- roasted, unsalted
2 cups coconut flakes (ideally unsweetened)
1/2 cup coconut oil
Juice of 2 lemons (or more for stronger flavour)
2 tbsp honey/maple syrup/rice malt syrup
1 tsp vanilla
Pinch of pink salt
Method:
Process all ingredients in food processor until a slightly chunky paste forms, roll into balls in hands and then in shredded/desiccated coconut/milled coconut chips. Place in fridge to firm up, for at least 4 hours.
