choc zucchini bread- 2 recipes :)
Recipe 1: Sunflower seeds as base
Makes 2 loaves/1 circular cake (9")
Naturally gluten and dairy free, paleo, nut free, delicious.
Ingredients:
1 medium- large zucchini
4 eggs
1.5 cups sunflower seeds- milled into flour/fine crumbs
2 Tbsp- ⅓ cup raw honey
¼ cup cacao powder
2 Tbsp coconut flour
1 tap vanilla extract
1 tsp-1 Tbsp cinnamon
½ tsp baking powder (gluten free)*
½ tsp baking soda *and 1/4 tsp cream of tartar
pinch of salt
Method:
Preheat oven to 175C/350F. Combine all ingredients in food processor and process until a batter is formed. Pour into 2 baking paper lined loaf tins or 1 circular cake tin. Bake for 25-35 minutes or until a skewer comes out clean.
Freezes well, sliced. I love to slather with butter to enjoy! :)

Recipe 2 Coconut flour as base
Makes 2 short loaves or 1 circular cake (9")
Naturally gluten and dairy free, paleo, nut free, delicious.
Ingredients:

2 Tbsp olive oil (or unsalted butter, ghee, or coconut oil)
2 Tbsp - 1/3 cup maple syrup or honey
1 tsp- 1 Tbsp of vanilla extract
1 tsp- 1 Tbsp cinnamon
1/3 cup coconut flour
1/4 cup cacao powder or unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
Optional
1/3 cup (56 g) chocolate chips
Method:
Preheat oven to 175C/350F. Combine all ingredients in food processor and process until a batter is formed. Pour into 2 baking paper lined loaf tins or 1 circular cake tin. Bake for 45-50 minutes or until a skewer comes out clean.
Freezes well, sliced. I love to slather with butter to enjoy! :)
