Bulletproof Stir Fry
(Vegetarian, Paleo, GF, DF, RSF)
Ingredients:
3 carrots
3-4 large mushrooms (Swiss Brown)
1 zucchini
1/2 head of broccoli
1/2 head of cauliflower
1 capsicum
1 Tbsp. coconut oil
Butter
Himalayan Pink Sea Salt
Method:
Chop all vegetables into 3-4cm chunks, let coconut oil melt in large frypan, add veggies and stir until mushrooms are browned. Serve with grass-fed Butter and Pink Himalayan Sea Salt and fresh lemon juice
Optional: If you prefer, par-cook broccoli and cauliflower until slightly tender when pierced with a fork. In microwave 3-4 minutes on high, covered, with 2cm of water in container.
